The Food

A spice bag is an Irish-Chinese dish and is far and away Ireland’s favourite takeaway. Crisp and juicy deep-fried chicken, a mountain of chips, sweet and punchy shredded veg, all flame-kissed together in a wok and coated in an addictive mouth-numbing Chinese spice mix.

Absolutely packed full of flavour, once you take your first bite, you won’t stop until the bag is empty.

We make our spice mix, marinades and all our sauces in-house from scratch. As well as the classic chicken spice bag we’re also offering you crispy chunks of sirloin beef, and deep-fried tofu. Don’t forget the chicken balls.

The Story

My name’s Max and I started making spice bags at home for my partner Gav. Like every Irish person abroad, it’s one of the things he missed most from home. He bought me my first spice bag at 2am on a cold Dublin street (with extra chicken and curry sauce) and I wasn’t sure how I had lived without one before. I’m half Singaporean, so I’ve spent my life around a huge blend of food cultures and understanding just how incredible late-night food can be.

I’ve worked in some of London’s top restaurants, most recently as operations manager for the Maginhawa Group (Donia, Mamasons Dirty Ice Cream, Ramo). Before that I worked in the JKS group for 5 years, working my way up to managing Kitchen Table (2 Michelin stars). I also spent some time working at Fallow, and Davies & Brook.

Now we want to offer everyone a taste of authentic Irish-Chinese food, especially for when they’re feeling scaldy.
